THE PLACE
Black Sheep Bistro is a new restaurant and lounge in Goa. Housed in a century old Portuguese mansion in downtown Panjim, the pale yellow edifice stands out on this busy street.
The brand's philosophy, which blends global inspirations with local cuisine can be subtly noticed and extends to the decor. While the exterior exudes old world charm, the interiors are thouroughly contemporary. The well lit, floor to ceiling bar is center stage, which ushers guests on entering the restaurant. Several artworks - paintings and photographs by local artists, also contemporary in nature, hang from the walls at the restaurant. Furniture is a mix of high bar stools and plush loungers set on dark brown wooden floors.
BSB, as lovingly referred to, the establishment services across four identifiable sections - the bar area, the lounge room, a fomal dining area and an outdoor gallery patio.
THE RESTAURANT
The Sukhtankars pride themselves in their farm-to-table food philosophy; sourcing and supporting fresh, local seasonal produce, within 100 miles radius of the restaurant. The cuisine may well be termed as 'Inspired Globally, Created Locally' with an intention to promote healthy eating habits and lowering carbon footprint as much as possible.
The chef and the entire team are trained by the owners. Handmade recipes of fusion dishes on the menu blend with their sophisticated offerings. Chocolate glazed and chicken stuffed Goan Chorizo, Masahari - quail eggs with kishmoore butter, squid-prawns Plancha, Tataki with rare Frigate mackerel, seafood risotto, Teesrio soup, Chocolate lava cake amonsgt others are specials and unique at on the BSB menu.
THE LOUNGE
The bar as centerstage, and the lounge aimed at the younger guests has the most concentration. A casual atmosphere sets the mood for after work hours or date nights. A well stocked premise with wine cellars and wine walls, there is always a drink to cherish with the evening meal. Drink themed nights through the week are being planned.
As a certified sommelier in the house, Prahlad provides suggestions for wine pairing with fusion foods. ‘Wine Flights’ is an offering of the largest selection of local and international wines available by the glass in the city by BSB. Dill Fling and delectable sangria pitchers, replace mundane cocktails, some of which are specially handcrafted. An extensive beer list from pilsners and lagers to pale ales and wheat beers grace the bar menu.
THE STORY
Black Sheep Bistro is the brainchild of Prahlad Sukhtankar and Sabreen Shariff. Both, graduates of Les Roches, Switzerland left their professionally succesful careers with the likes of Fours Seasons and decided to begin their own culinary venture.
Prahlad, being a Goan, returned home with immense experience that was gathered and set up a restaurant in the Goan capital. Being a wine sommelier, he brings the drink to the table, suggesting pairings and an array of wines from around the world. Prahlad looks after the kitchen, bar and marketing while Sabreen manages the operations of BSB.
